Egg and spinach

Spinach 4 handful, onion, 1, thinly sliced, egg 2, chilly flake 1/2 tsp., salt to taste, coconut oil a tbsp.
Heat oil in a pan, drop in onion, sauté till tender, add chilly flakes, salt, stir for 15 seconds, add spinach and sauté. Once sautéed, just make space in the centre of the pan, break the eggs and allow to cook. Sprinkle salt on top of the egg. Serve as a meal with a banana.

Chilly Egg with Banana

Eggs 10, boil cooked, peeled and silted on surface.
Shallots 10, crushed and chopped, chilly flakes 1 tbsp., coconut oil 2 tbsp., salt to taste.
Heat oil in a pan, drop in shallots, sauté till golden brown, add chilly flakes and salt.
Stir for 20 seconds, add eggs and combine well, allow to remain in low flame for five minutes.
Serve with boiled banana. It is special with, sweet and sour taste.
( This special dish was served for us at college hostel)


Chicken and egg curry

Chicken bone less 1 lb., eggs 4, cooked and peeled, chicken masala 1 tbsp., onion 1, chopped, ginger 2 inch piece, garlic cloves 3, both finely chopped, salt to taste, coconut oil 2 tbsp., cilantro chopped 1 tbsp.
Heat oil in a pan, drop in onion, sauté till tender, add ginger and garlic, sauté till light brown, add masala, stir for 30 seconds, add chicken, salt and combine well and cook in low flame. Add a cup of water to have sauce, allow to boil. Make slits on eggs and drop into the curry, and allow to cook in low flame for 10 more seconds. Add cilantro, mix well. Transfer into a serving bowl.

Mayonese dip

Mayonnaise 1 cup, coconut oil 1 tbsp., garam masala 1 tsp.
Heat oil in pan, add garam masala, sauté for 20 seconds,
pour the oil into mayonnaise and mix well.
Excellent dip for meat fry, fish fry and meat egg balls.

 

Meat Egg Balls

 Hen eggs 10, boil cook, allow to cool, peel and keep aside.
Ground beef 1 lb., pepper powder 2 tsp., salt to taste,
 paprika powder 2 tsp., curry leaf 2 sprigs finely chopped, cilantro chopped 1 tbsp. Mix the ingredients in a blender.
Moist your palms and divide the beef dough into 10 balls.
Spread patties and cover eggs. (Pic 1)
Oil as required to fry, fine flour a cup, bread crumbs a cup,
eggs 2, whisked.
Roll the balls in flour, then in egg liquid, then in bread crumbs and deep fry till golden brown. ( Pic 2)

Halve the fried eggs and serve with mayo sauce. ( Pic 3)

Lamb potato roast

Lamb shoulder 1.5 lb., cut into 2.5 cm pieces, turmeric powder 1/2 tsp., salt to taste, mustard sauce 2 tsp., ginger garlic paste 1 tsp., shallots 2, chopped, x altogether and pressure cook.
1 potato into 2 cm cubes, cooked, onion 1, chopped, ginger 1 inch piece, garlic cloves 4, both chopped, pepper powder 1 tsp., coconut oil 1 tbsp.


Heat oil in a shallow pan, drop in onion sauté till light brown, add ginger and garlic, mutton masala 2 tsp. Sauté , add cooked potato and lamb, combine well, allow the juice to thicken, adjust salt, add pepper powder, mix well, garnish with cilantro.
Transfer into a serving bowl, serve with chapatti.
