Bilimbi pickle(Chemmeenpuli achar)

Bilimbi 1 kg,(half matured is best),wash,clean,dry,rub it with turmeric,chilly powders and salt.
Dry it in hot sunlight for 3 days.Turn it on the 2nd day.The weight will reduce to 1/3rd.
Sesame oil 3 tblspn,
Asafoetida powder 1 tspn,
Fenugreek powder 1tspn,
Kashmir chilly powder 1 tblspn,
Salt as required
Heat oil ,simmer flame,add chilly powder,mix,off flame,add rest of ingredients,
mix well,add bilimbi,combine well,allow to cool,store in air tight glass containers.
This can be kept for 2 to 4 years.
